Granola

Granola is something I wanted to make for a long time, I just kept on putting off making it. Why? I don't know... It is so easy to make and yet so pricey when you go to buy it ready made. I have used freeze dried fruit in this recipe as I prefer the texture of it in granola. A little bit really does go a long way and you don't need as much as you might think. If you can't get a hold of freeze dried fruit then by all means use dried fruit. The same goes for the nuts I've used you may prefer to use flaked almonds or leave them out all together. The beauty of making your own granola is that you can make it entirely to your taste.

I enjoy eating granola with greek yogurt for breakfast, but it has become a favourite to take a handful for a quick snack with the rest of the family.

2 Tbsp avocado oil

125ml maple syrup

2 Tbsp honey

1 tsp vanilla paste

300g rolled oats

100g mixed seeds

100g nuts (I've used a mixture of roughly chopped pecan and pistachio)

1/2 tsp ground cinnamon

20g freeze dried fruit or 100g dried fruit

50g coconut flakes

Preheat your oven to 150°c/fan 130°c 

Mis together the oil, maple syrup, honey and vaniila paste in a large bowl. 

Tip in the remaining dry ingredients apart from the freeze dried fruit and the coconut flakes, and mix until everything is well coated.

Line two baking seets with parchement paper and evenly spread out the granola mix and bake for 15 minutes, then mix in the coconut flakes and bake for another 10-15 minutes.

Leave to cool completely before mixing in the dried fruit.

Store in an airtight contaier for up to 1 month. I guarantee that it won't last that long!
